Using store-bought tortellini keeps things quick and easy, while the creamy tomato broth and Italian herbs create all the flavours of a classic Italian pasta soup with minimal effort.

Ready in under 30 minutes and made in just one pot, it’s the perfect easy tortellini soup for busy weeknights, lazy weekends, or whenever you’re craving a bowl of Italian comfort food. I love serving this tomato tortellini soup recipe with my homemade focaccia for dipping into the rich broth, or topped with my homemade croutons for extra crunch.   • Tinned Tomatoes - Form the base of the rich tomato broth. Use chopped or plum tomatoes.

  • Heavy bottomed pan: For this recipe, I recommend using a heavy-bottomed pan or Dutch oven. It helps the vegetables cook evenly and prevents the soup from catching on the bottom as it simmers. Personally, I always use my Le Creuset casserole dish. It’s a real workhorse in my kitchen and comes out for everything from soups and stews to pasta sauces and casseroles. While it’s definitely an investment piece, the quality is exceptional and, if looked after properly, it’s something that can last a lifetime. For me, it’s one of those kitchen purchases that has more than paid for itself over the years.

This creamy Italian Tomato Tortellini Soup is quick, easy, and made in just one pot. Simply sauté the vegetables, simmer in a rich tomato broth, then add the tortellini, cream, and Parmesan for a comforting meal that’s ready in under 30 minutes.

1: Dice the vegetables. Heat a little oil in a large saucepan over medium heat.

Add the chopped vegetables and Italian herbs, then sauté for 3 to 4 minutes .

Mix well, bring to a gentle simmer. Cook on low heat for around 10 minutes to allow the flavours to develop.

  • 1 Tin Chopped tomatoes
  • Handful Cherry tomatoes
  • 1 teaspoon Italian seasoning
  • 100 ml double cream
  • 40 grams fresh grated parmesan cheese
  • 1 courgette (zucchini)
  • 250 grams cheese tortellini (store bought)
  • 300 ml Veggie stock (or chicken stock)
  • handful fresh basil

Instructions

  • Dice the onion, celery, carrot, tomatoes, courgette, and garlic.Heat a little oil in a large saucepan over medium heat. Add the chopped vegetables and Italian herbs, then sauté for 3 to 4 minutes until softened and fragrant.
  • Stir in the tinned tomatoes and stock. Mix well, bring to a gentle simmer, and cook on low heat for around 10 minutes to allow the flavours to develop.
  • Add the cream, Parmesan, and tortellini. Stir well and cook according to the packet instructions for the tortellini.
  • Stir through the fresh basil just before serving.
