I’m fully jumping on the cottage cheese train lately, and these High-Protein Cottage Cheese and Chive Bagels are one of my favourite ways to use it. Cottage cheese is an affordable source of protein, helps keep me feeling full for longer, and works brilliantly in baking. Unlike traditional bagels, these are quick to make with no yeast and no proving time required.

I love making a batch at the weekend, freezing them individually, and grabbing one on busy mornings for breakfast or packing one for lunch at work. They’re easy, satisfying, and a great way to add more protein to your day. These bagels are also delicious topped with smoked salmon and cream cheese, or, if you want to get a little fancy, try them with my homemade gravlax recipe for an extra-special breakfast or brunch.

What equipment will you need to make High-Protein Cottage Cheese and Chive Bagels?

  • Silicone mat: You can of course use baking paper but a silicone mat is reusable and much more convenient, a must piece of kitchen equipment
  • Mixing bowl: A staple of any kitchen – I have been using this mixing bowl set for years and it is still going strong – Highly recommended.
  • Food processor: A food processor is a great piece of kitchen equipment for all sorts of recipes. This food processor is a workhorse in my kitchen – highly recommended.

How do I make High-Protein Cottage Cheese and Chive Bagels:

These easy cottage cheese bagels come together with just a few simple steps. Blend, mix, knead, shape, and bake for soft, chewy homemade bagels packed with protein and flavour.

Preheat the oven to 180°C and line a baking tray with baking paper or a silicone baking mat.

1: Blend the cottage cheese in a food processor until smooth. This gives the bagels a smooth texture

2: Add the blended cottage cheese, flour, cheese, and chives to a mixing bowl. Mix with a fork until combined.

3: Use your hands to bring the dough together, then transfer it to a lightly floured surface and knead for 4-5 minutes until smooth. Divide the dough into 5 equal portions and roll each into a ball.

4: Poke a hole through the centre of each ball and gently stretch to form a bagel shape. Place the bagels on the prepared baking tray. Brush the tops with beaten egg, then sprinkle with poppy seeds, sesame seeds, and a little salt and pepper.

5: Bake for 25-30 minutes, or until golden brown and cooked through.

6: Allow to cool slightly on a cooling rack before serving.

  • Storing – Allow the bagels to cool completely before storing. Place them in an airtight container and keep them in the fridge for up to 4 days. Enjoy them cold, or toast them to refresh their texture.

  • Freezing – Once cooled, wrap the bagels individually or place them in a freezer-safe container or bag. Freeze for up to 3 months.

  • Reheating – To enjoy, thaw overnight in the fridge or at room temperature for a few hours. Alternatively, slice and toast straight from frozen. A quick toast brings back their delicious chewy texture and makes them taste freshly baked.

  • I like to freeze these bagels individually and grab one as I head out the door for an easy high-protein breakfast or lunch at work

  • Don’t overwork the dough - Knead just until the dough is smooth and comes together. Over-kneading can make the bagels tougher than they need to be.

  • handfull chopped chives
  • 1 teaspoon poppy seeds
  • 1 teaspoon sesame seeds

Instructions

  • Blend the cottage cheese in a food processor until smooth.
  • Add the blended cottage cheese, flour, cheese, and chives to a mixing bowl. Mix with a fork until combined.
  • Use your hands to bring the dough together, then transfer it to a lightly floured surface and knead for 4-5 minutes until smooth.
  • Divide the dough into 5 equal portions and roll each into a ball.
  • Poke a hole through the centre of each ball and gently stretch to form a bagel shape. Place the bagels on the prepared baking tray with a silicone mat or baking paper.
