Ingredients

  • 1 onion
  • 5 cloves Garlic
  • 2 celery stalks
  • 1 carrot
  • 1 Tin Chopped tomatoes
  • Handful Cherry tomatoes
  • 1 teaspoon Italian seasoning
  • 100 ml double cream
  • 40 grams fresh grated parmesan cheese
  • 1 courgette (zucchini)
  • 250 grams cheese tortellini (store bought)
  • 300 ml Veggie stock (or chicken stock)
  • handful fresh basil

Instructions

  • Dice the onion, celery, carrot, tomatoes, courgette, and garlic.Heat a little oil in a large saucepan over medium heat. Add the chopped vegetables and Italian herbs, then sauté for 3 to 4 minutes until softened and fragrant.
  • Stir in the tinned tomatoes and stock. Mix well, bring to a gentle simmer, and cook on low heat for around 10 minutes to allow the flavours to develop.
  • Add the cream, Parmesan, and tortellini. Stir well and cook according to the packet instructions for the tortellini.
  • Stir through the fresh basil just before serving.
  • If you prefer a thicker soup, mix 1 tablespoon cornflour with 1 tablespoon water to form a slurry. Stir into the soup and cook for a few minutes until it reaches your desired consistency.

Notes

  • Use your favourite fresh or frozen cheese tortellini for this recipe.
  • For a lighter soup, substitute the cream with half-fat crème fraîche or additional stock.
  • Add a handful of spinach or kale during the last few minutes of cooking for extra vegetables.
  • Adjust the consistency by adding more stock for a thinner soup or use the cornflour slurry for a thicker, creamier texture.
  • Garnish with extra Parmesan and fresh basil for the best flavour.
