These Turkish flatbreads are one of my favourite things to make when I want something homemade without spending hours in the kitchen. They’re incredibly easy to prepare, require just a handful of simple ingredients, and go with almost everything. I love serving them as part of a mezze spread alongside my Homemade Baba Ganoush and Turkey Kofta Mezze Plate. They are perfect for scooping up dips and wrapping around juicy koftas. They’re also fantastic for picnics, packed lunches, and summer gatherings…just add a selection of dips and you’ve got an awesome delicious crowd-pleasing spread. My 5 year old loves munching them without anything else. My personal dip to eat these with is olive tapenade, the salty olive dip goes really well with the soft garlicky bread.   • Frying pan: This is the frying pan I use to make these Greek yogurt flatbreads. I’ve had it for years and it’s still going strong. It heats evenly, gives the flatbreads beautiful golden spots, and the non-stick surface makes cooking and flipping effortless.
  • Mixing bowl: I use this mixing bowl for almost all of my bread making recipes and baking projects. It’s sturdy, generously sized, and has plenty of room for mixing and proving dough, making it perfect for this homemade flatbread recipe.

How do I make Turkish Flatbread Recipe with Greek Yogurt, Garlic and Coriander?:

This easy Turkish flatbread recipe comes together with simple pantry staples and a few fresh ingredients. The dough is quick to prepare, requires minimal kneading, and cooks in a frying pan, giving you soft, fluffy flatbreads with delicious garlic and coriander flavour in under an hour.

1: In a large bowl, combine the sugar, yeast, and warm water. Stir well and leave in a warm place for 15 minutes, or until the mixture becomes foamy and bubbly.

2: Once the yeast has activated.

Whisk in the Greek yogurt, olive oil, and salt until combined.

3: Add in the flour, garlic, and coriander.

Mix with a fork until a shaggy dough forms.

4: Turn the dough out onto a lightly floured surface and knead gently for 2-3 minutes until smooth. If the dough is sticky, add a little extra flour as needed.

5: Divide the dough into 10 equal pieces and shape each into a ball.

Lightly dust with flour, cover, and leave to prove in a warm place for 15 minutes.

6: Heat a large frying pan over medium heat. Roll one piece of dough into a circle approximately 6-7 inches (15-18cm) in diameter. Brush one side lightly with olive oil and sprinkle with a little salt.

7: Place the flatbread in the pan, oil-side down. Brush the top side with olive oil. Cook for 1-1½ minutes, until the surface is covered with bubbles, then flip and cook until golden and cooked through

8: Repeat the same process with the remaining dough pieces to make 10 flatbreads.

  • 8 grams Active dried yeast
  • 15 grams sugar
  • 170 grams Greek yogurt
  • 10g salt
  • 510 grams plain flour (all purpose)
  • 25 grams chopped coriander (Cilantro)
  • 1 whole bulb crushed garlic

Instructions

  • In a large mixing bowl, combine the sugar, yeast, and warm water. Stir well and leave in a warm place for 15 minutes, or until the mixture becomes foamy and bubbly.
  • Whisk in the Greek yogurt, olive oil, and salt until combined.
  • Add the flour, garlic, and coriander. Mix with a fork until a shaggy dough forms.
  • Turn the dough out onto a lightly floured surface and knead gently for 2-3 minutes until smooth. If the dough is sticky, add a little extra flour as needed.
  • Divide the dough into 10 equal pieces and shape each into a ball. Lightly dust with flour, cover, and leave to prove in a warm place for 15 minutes.
