Ingredients

  • 270 grams full fat cottage cheese
  • 190 grams self raising flour
  • 1 egg (whisked)
  • handfull chopped chives
  • 1 teaspoon poppy seeds
  • 1 teaspoon sesame seeds

Instructions

  • Blend the cottage cheese in a food processor until smooth.
  • Add the blended cottage cheese, flour, cheese, and chives to a mixing bowl. Mix with a fork until combined.
  • Use your hands to bring the dough together, then transfer it to a lightly floured surface and knead for 4–5 minutes until smooth.
  • Divide the dough into 5 equal portions and roll each into a ball.
  • Poke a hole through the centre of each ball and gently stretch to form a bagel shape. Place the bagels on the prepared baking tray with a silicone mat or baking paper.
  • Brush the tops with beaten egg, then sprinkle with poppy seeds, sesame seeds, and a little salt and pepper.
  • Bake for 25–30 minutes, or until golden brown and cooked through. Allow to cool slightly before serving.

Notes

 
 
  • Blend the cottage cheese until completely smooth for the best dough texture.
 
 
  • If the dough feels sticky, add a little extra flour when kneading.
 
 
  • Top with your favourite seeds or seasoning blends.
 
 
  • Store cooled bagels in an airtight container in the fridge for up to 4 days.
