Ingredients

  • 50 grams parmesan
  • 2 Anchovy fillets (I use tinned Anchovies)
  • 100 ml Extra virgin olive oil
  • 180 grams mayonnaise
  • 2 cloves garlic
  • 1 teaspoon Dijon Mustard
  • 1 Juice of lemon

Instructions

  • Add all the ingredients to a blender, or place them in a jug if you’re using a stick blender.
  • Blend until completely smooth, creamy and well combined.
  • Taste and adjust the seasoning if needed.
  • Pour into an airtight container or jar and chill until ready to use.

Notes

This dressing is extra garlicky and rich - adjust the garlic to taste if you prefer it milder.
It thickens as it chills, so give it a quick stir before serving.
Ideal for chicken Caesar salads, summer buffets and BBQ spreads.
Works as a dip, a sandwich spread or a drizzle for roasted veg.
