  • Pull the romaine leaves off individually, then wash and pat them completely dry
  • Cut or tear the leaves into your preferred size, I like mine on the chunky side for the best crunch.
  • Add the Caesar dressing to a large mixing bowl, then tip in the lettuce. Toss well so every leaf is lightly coated.
  • Using a vegetable peeler, shave the parmesan straight into the bowl.
  • Add the homemade croutons, give everything a final gentle mix, and serve immediately.

Notes

Dry the romaine lettuce really well, any water will dilute the Caesar dressing and make the salad soggy.
Toss the lettuce with the Caesar dressing gently so the leaves stay crisp and coated, not weighed down.
Use freshly shaved parmesan for the best flavour and texture; it melts slightly into the dressing.
Homemade croutons make a huge difference here,  crunchy, golden and full of flavour.
Serve immediately after mixing to keep everything crisp and fresh.
