Ingredients

  • 2 passion fruit
  • 1 Lime
  • 2 tablespoon Desiccated coconut
  • Handful Crystallised ginger
  • ½ diced fresh pineapple
  • 2 tablespoon Honey
  • 500 grams Greek yogurt

Instructions

  • In a mixing bowl, combine the Greek yogurt, honey, juice of one lime, and the pulp from half of the passion fruit. Stir until smooth and well combined.
  • Line a baking tray or shallow freezer-safe dish with parchment paper. Spoon the yogurt mixture onto the tray and spread it into an even layer.
  • Scatter the pineapple and ginger evenly over the yogurt. Spoon over the remaining passion fruit pulp, then sprinkle with the shredded coconut and fresh lime zest.
  • Freeze for at least 4 hours, or preferably overnight, until completely firm.
  • Once frozen, remove from the tray and snap into shards or pieces. Enjoy immediately, or store in an airtight container in the freezer for up to 1 month.

Notes

  • Full-fat Greek yogurt creates the creamiest texture, but low-fat Greek yogurt will also work.
 
 
  • Fresh or canned pineapple can be used. If using canned, drain well to prevent excess moisture.
 
 
  • For extra crunch, add chopped macadamia nuts or toasted coconut before freezing.
 
 
  • Freeze overnight for the firmest texture and easiest snapping.
 
 
  • Store the yogurt bark in an airtight container in the freezer for up to 1 month.
 
 
  • Let the bark sit at room temperature for 1 to 2 minutes before serving for the best texture.
 
 
  • Feel free to swap the pineapple for mango or kiwi for a different tropical twist.
