Ingredients

  • 500 grams turkey mince
  • 1 carrot
  • 1 white onion
  • 1 yellow pepper
  • 1 courgette
  • 3 cloves garlic
  • handful cashew nuts
  • thumb piece ginger
  • handful fresh coriander
  • 2 tablespoon sesame seeds
  • 2 baby gem lettuce
  • teriyaki sauce
  • 4 spring onions

Instructions

  • Toast the sesame seeds: Spread sesame seeds on a baking tray and toast in the oven for 5–8 minutes, or until golden. Set aside.
  • Prep the garnishes: Roughly chop the cashew nuts and finely dice the spring onion. Set both aside for topping.
  • Cook the vegetables: Finely dice the carrot, onion, pepper, courgette, garlic, and ginger. Add to a pan with a little oil and cook for 5–8 minutes until softened. Remove from the pan and set aside.
  • Cook the turkey: Add the turkey mince to the same pan and cook until browned, breaking it up as it cooks.
  • Combine: Return the cooked vegetables to the pan. Stir in the chopped coriander and teriyaki sauce. Simmer for a few minutes until bubbling and well combined.
  • Assemble: Spoon the teriyaki turkey mixture into baby gem lettuce leaves.
  • Garnish & serve: Top with toasted sesame seeds, chopped cashews, and spring onions. Serve immediately.

Notes

• Toast the sesame seeds just until golden — they can burn quickly.
• Dice the vegetables finely so they cook evenly and blend well with the turkey.
• Use any mix of colourful veg you like; peppers and courgette add great texture.
• For extra crunch, keep some cashews larger rather than fully chopped.
• Baby gem lettuce works best, but iceberg or romaine leaves also hold the filling well.
• Adjust the amount of teriyaki sauce depending on how saucy you like the mixture.
