Ingredients

  • 2 slices your favourite bread
  • 1 tablespoon Basil pesto
  • 1 Tomato
  • ½ Mozzarella ball
  • 50 grams Cooked chicken
  • handful rocket

Instructions

  • Prep the bread - Spread a generous layer of basil pesto over one or both slices of bread.
  • Add the tomatoes - Slice the tomato and lay the slices evenly over the pesto.
  • Layer the mozzarella - Slice the mozzarella and place it on top of the tomatoes.
  • Add the chicken - Pile the cooked, sliced chicken breast over the mozzarella
  • Finish with greens - Add a handful of fresh rocket for peppery crunch.
  • Assemble - Top with the second slice of bread and press gently to hold everything in place.
  • Serve - Slice if you like - and enjoy. Easy peasy!!

Notes

Good bread matters - A sturdy ciabatta, focaccia or sourdough holds the fillings well and won’t go soggy.
Dry the tomatoes - Patting the tomato slices dry keeps the sandwich from getting watery.
Use fresh mozzarella - The softer, creamier kind gives the best caprese texture - just slice it thick.
Leftover chicken works great - Grilled, roasted or pre‑cooked chicken all fit the bill for an easy lunch.
Layer smartly - Keeping the pesto on the bread and the rocket on top helps stop the sandwich slipping apart.
Perfect for picnics - Wrap tightly and chill -  it travels well and tastes even better after the flavours mingle
