Ingredients

  • 4 slices your favourite bread
  • ½ avocado
  • 2 handful rocket
  • 1 courgette
  • 1 yellow pepper
  • 1 red pepper
  • 1 tablespoon Baba Ganoush

Instructions

  • Roast the veg - the peppers and courgettes. Season with salt and pepper, drizzle with a little oil and roast at 190°C for about 25 minutes until soft and lightly charred. Leave to cool.
  • Prep the bread - Spread a generous layer of baba Ganoush over your bread.
  • Add the avocado - Slice the avocado and layer it over the baba Ganoush.
  • Add the roasted veg - Pile on the cooled roasted peppers and courgettes.
  • Finish with greens - Add a handful of fresh rocket for crunch and freshness
  • Assemble - Top with the second slice of bread. Done - easy peasy!!

Notes

• Let the veg cool fully - Warm roasted veg will make the bread soggy - cooling keeps the sandwich sturdy.
Dry the avocado - Patting the slices helps everything layer neatly without slipping.
Use thick bread - Ciabatta, focaccia or sourdough hold the fillings best and travel well for picnics.
Season the layers - A tiny pinch of salt on the avocado and veg boosts all the Mediterranean flavours.
Baba ganoush as the “glue” - Spreading it directly on the bread helps anchor the fillings and adds creaminess without mayo.
Make‑ahead friendly - Roast the veg the day before - they taste even better once chilled.
