Gently melt the coconut oil in a small saucepan over low heat. Add the honey and stir until fully combined.
Whisk in the cacao powder until the mixture is smooth and glossy with no lumps remaining.
Remove the pan from the heat and place it over a bowl of ice water. Stir for a few minutes until the chocolate mixture thickens slightly. This helps create a thicker chocolate layer rather than a very thin one.
Line a small tray or container with baking paper and pour in the chocolate mixture, spreading it evenly.
Sprinkle over the crushed biscuits, chopped pistachios, and freeze-dried raspberries, gently pressing them into the chocolate if needed. Place in the freezer for 2-3 hours, or until completely set. Once firm, remove from the tray and break into pieces.
Store the chocolate in an airtight container in the freezer, as it softens and melts quickly when left at room temperature.
