Ingredients

  • 200 grams coconut oil
  • 160 grams cacao powder
  • 6 tablespoon Honey
  • 4-5 Biscuits of your choice
  • 75 grams Roughly chopped pistachios
  • 2 tablespoon freeze dried raspberries

Instructions

  • Gently melt the coconut oil in a small saucepan over low heat. Add the honey and stir until fully combined.
  • Whisk in the cacao powder until the mixture is smooth and glossy with no lumps remaining.
  • Remove the pan from the heat and place it over a bowl of ice water. Stir for a few minutes until the chocolate mixture thickens slightly. This helps create a thicker chocolate layer rather than a very thin one.
  • Line a small tray or container with baking paper and pour in the chocolate mixture, spreading it evenly.
  • Sprinkle over the crushed biscuits, chopped pistachios, and freeze-dried raspberries, gently pressing them into the chocolate if needed.
  • Place in the freezer for 2-3 hours, or until completely set. Once firm, remove from the tray and break into pieces.
  • Store the chocolate in an airtight container in the freezer, as it softens and melts quickly when left at room temperature.
