Dice the mango into small, even cubes and add them to a mixing bowl.
Finely dice the red onion and toss it in with the mango.
Chop the cucumber into neat, even pieces and add to the bowl.
Dice the red pepper the same size as the cucumber and mix it through.
Finely chop the chilli, removing the seeds if you prefer it milder, and add it in. This step is optional. If my 5 year old is eating this I usually leave out the chilli.
Season with a pinch of salt and squeeze in the juice of 2 limes.
Stir through the chopped coriander and mint until everything is evenly combined.
Taste and adjust with extra lime or salt if needed, then serve fresh.
