Ingredients

  • 1 mango
  • cucumber
  • 1 red onion
  • 2 limes
  • handfull Coriander
  • 10 Mint leaves
  • 1 red pepper
  • 1 chilli
  • pinch salt

Instructions

  • Dice the mango into small, even cubes and add them to a mixing bowl.
  • Finely dice the red onion and toss it in with the mango.
  • Chop the cucumber into neat, even pieces and add to the bowl.
  • Dice the red pepper the same size as the cucumber and mix it through.
  • Finely chop the chilli, removing the seeds if you prefer it milder, and add it in. This step is optional. If my 5 year old is eating this I usually leave out the chilli.
  • Season with a pinch of salt and squeeze in the juice of 2 limes.
  • Stir through the chopped coriander and mint until everything is evenly combined.
  • Taste and adjust with extra lime or salt if needed, then serve fresh.
