Ingredients

  • 500 grams chopped boneless chicken thighs (or you can use chicken breast)
  • 250 grams Sliced mushrooms
  • 2 sticks celery
  • 1 carrot
  • 1 white onion
  • 4 cloves garlic
  • 170 ml double cream (heavy cream)
  • 450 ml Hot chicken stock
  • Handful Chopped parsley
  • 180 grams orzo pasta (use approximately 90 grams per person)
  • 30 grams parmesan

Instructions

  • Heat a drizzle of oil in a large skillet or deep frying pan over medium-high heat. Add the chopped chicken and cook for 4–5 minutes, stirring occasionally, until lightly browned on the outside but not fully cooked through. Remove the chicken from the pan and set aside.
  • In the same pan, add the mushrooms, celery, carrot, onion, and garlic. Sauté for 5–6 minutes over medium heat, stirring frequently, until the vegetables have softened and the mushrooms are lightly golden. Add more oil or a knob of butter of required.
  • Return the chicken to the pan and pour in the stock. Stir in the orzo and bring the mixture to a gentle simmer.
  • Cook for 6–7 minutes, stirring occasionally, until the stock has reduced by about half and the orzo is beginning to soften. This helps develop a rich, concentrated flavor.
  • Stir in the cream and continue cooking for 3–4 minutes, or until the sauce has thickened and the orzo is tender.
  • Remove the pan from the heat and stir through the Parmesan and fresh parsley. Season with salt and freshly ground black pepper to taste. Serve immediately, garnished with extra Parmesan and parsley if desired.

Notes

  • Chicken: Both chicken breast and chicken thighs work well in this recipe. Chicken thighs will give a richer flavor and stay extra juicy.
  • Orzo: Stir the orzo occasionally while simmering to prevent it from sticking to the bottom of the pan.
  • Stock: If the sauce becomes too thick before the orzo is fully cooked, add a splash of extra stock or water.
